1/2 English Cucumber
1 Small Shallot
1 Clove of Garlic
1/2 Bunch Cilantro (corriander)
1 - 2 Limes
2 Avocados (Ripe but slightly firm)
Quarter the tomatoes and remove seeds. Small dice the tomatoes and place in a mixing bowl.
Slice cucumber in half lengthwise and remove the seeds. Small dice the cucumber and add to the bowl.
Cut Jalapeño in half lengthwise and remove the seeds. Small dice the pepper and to the bowl.
Peel and small dice the shallot. Add to the bowl.
Crush, peel, and mince the garlic. Add to the bowl.
Chop the cilantro and add to the bowl.
Juice lime(s) and add to the bowl.
Season with salt and pepper and mix.
Once all is mixed and desired salt and pepper levels have been reached cut the avocados in half and remove the pits. Small dice the flesh while they are still attached to the skin. Remove with a spoon and gently fold into salsa mixture until all incorporated.
Re-taste and adjust with salt and pepper if necessary.
Use with chips as a dip or on top of fish and meats as a sauce.
